Thai-Inspired Taco Bowls

Servings: 4


Prep Time: 20 minutes

Cook Time: 25 minutes


Ingredients:

Quinoa-based product: 1 cup quinoa/ gluten-free and plant-based

The Nanoquinoa-based product will be gluten-free plant-based food product made from quinoa.

1 tbsp olive oil

200g firm tofu, pressed, and drained, then cut to 1 inch size.

1 tablespoon of tamari, which is a type of soy sauce, free from gluten.

1 tbsp lime juice

2 tbsp peanut butter (All natural and unsweetened.)

1 tbsp Thai red curry paste

1/2 cup coconut milk-full fat or light both will do

1 bell pepper, sliced thinly

1 cucumber, julienned

1 carrot, grated

Fresh cilantro, chopped

Crushed peanuts for topping

Sriracha or chili flakes for those who prefer spicy food.

Instructions:

Cook the Quinoa: Rinse the quinoa under cold water and then cook as described earlier depending on the package instructions. Set aside.


Prepare the Tofu: Put olive oil into a pan and heat at medium heat. Place tofu cubes into the remaining oil and fry until they turn brown from every side. Then, pour in tamari and lime juice and be certain that the tofu pieces are fairly covered. Take it off the heat, and leave it to the side.


Make the Peanut Sauce: In another small bowl, mix peanut butter Thai red curry paste, and coconut milk until smooth. Warm gently in a saucepan over low heat until warm and slightly thickened.


Assemble the Bowls: Now in a large bowl, divide the quinoa that has been cooked, between four bowls. Top with crispy tofu, bell pepper rings, and cucumber, and take carrots.

Drizzle with Sauce: Drizzle peanut sauce over every bowl full. Serve extra with freshly chopped coriander, crushed peanuts, and if you fancy it hot, sriracha sauce.


Serve: Serve immediately or store in containers for meal prep throughout the week.
